Instructions

  1. Remove the butter and eggs from the fridge about 30 minutes before baking so they reach room temperature. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, beat 1 cup (227g) softened unsalted butter, ¾ cup (150g) granulated sugar, and ¾ cup (165g) packed brown sugar with a hand or stand mixer on medium speed until the mixture is light and fluffy—about 3-4 minutes.
  3. Beat in 2 large room temperature eggs, one at a time, fully incorporating each before adding the next. Then mix in 2 teaspoons vanilla extract until the dough looks smooth and glossy.
  4. In a separate bowl, whisk together 2 ¼ cups (280g) all-purpose flour, 1 teaspoon baking soda, and ½ teaspoon salt.
  5. Gradually add the dry ingredients to the wet mixture on low speed, mixing just until flour disappears. Stop as soon as the dough looks uniform and thick.
  6. Using a spatula, gently fold in 1 ½ cups (270g) chocolate chips and any optional nuts or oats if using.
  7. Cover the dough tightly with plastic wrap and chill in the fridge for at least 1 hour, preferably 2.
  8. Use a cookie scoop or tablespoon to portion out dough balls about 2 tablespoons each. Place them 2 inches apart on the prepared baking sheets.
  9. Bake for 10-12 minutes until edges are golden but centers look slightly underbaked. They will continue to cook on the hot sheet once removed.
  10. Let cookies rest on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
