A quick and easy appetizer featuring cocktail smokies wrapped in crispy bacon and coated with a sticky, sweet-savory brown sugar glaze. Perfect for parties, casual hangouts, or last-minute snacks.

  • Little smokies (cocktail sausages), about 1 package (14 oz)
  • Bacon slices, thin-cut, about 14 slices
  • ½ cup packed brown sugar (100g)
  • 1 teaspoon Dijon mustard
  • ½ teaspoon smoked paprika
  • Pinch of freshly ground black pepper
  • Toothpicks for securing bacon
  • Optional: garlic powder (pinch)
  • Optional: red pepper flakes (dash)
  • Optional: maple syrup or honey (as a substitute for brown sugar glaze)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together ½ cup packed brown sugar, 1 teaspoon Dijon mustard, ½ teaspoon smoked paprika, and a pinch of black pepper to prepare the glaze. Set aside.
  3. Wrap each little smokie tightly with a slice of bacon and secure with a toothpick through the overlapping ends.
  4. Place the bacon-wrapped smokies seam-side down on a parchment-lined baking sheet, spaced slightly apart.
  5. Brush each wrapped smokie generously with the brown sugar glaze.
  6. Bake in the preheated oven for 15 minutes.
  7. Remove the tray and carefully flip each smokie using tongs or a fork.
  8. Brush the flipped side with more glaze and return to the oven for another 10 minutes or until the bacon is crisp and caramelized.
  9. If needed, broil for 1-2 minutes at the end to crisp further, watching closely to avoid burning.
  10. Let the smokies rest on the baking sheet for 5 minutes before transferring to a serving platter to allow the glaze to set and keep the bacon crisp.

Notes

Use thin-cut bacon for best results; thick-cut bacon may require longer cooking or pre-cooking. Flip smokies halfway through baking for even crispness. Avoid over-glazing early to prevent burnt sugar. Do not overcrowd the pan to allow bacon to crisp properly. For reheating, use oven at 350°F for 8 minutes to maintain crispness. Can be prepared ahead and refrigerated before baking; add glaze just before baking.
