Refreshing Cucumber Mint Mocktail

A crisp and bubbly cucumber mint mocktail perfect for summer parties, combining fresh cucumber juice, mint, lime, and sparkling water for a light and refreshing drink.

Ingredients

  • 1 medium cucumber, peeled and roughly chopped (about 8 ounces)
  • 1012 fresh mint leaves, plus extra for garnish
  • Juice of 1 large lime (about 1 tablespoon)
  • 2 tablespoons simple syrup (adjust to taste)
  • 1 ½ cups chilled sparkling water per serving
  • Ice cubes, plenty
  • Pinch of sea salt (optional)

Instructions

  1. Prepare the cucumber juice: Peel and roughly chop the cucumber. Blend until smooth, then strain through a fine mesh strainer or cheesecloth to extract about ¾ cup (6 fl oz) of juice. Discard or save pulp.
  2. Muddle the mint: Place mint leaves in a pitcher or glasses and gently muddle with a muddler or wooden spoon to release oils without bitterness.
  3. Mix the mocktail base: Add cucumber juice, simple syrup, lime juice, and a pinch of sea salt (if using) to the muddled mint.
  4. Add ice and sparkling water: Fill with plenty of ice cubes and pour chilled sparkling water over the mixture. Stir gently to combine without losing fizz.
  5. Garnish and serve: Add a sprig of fresh mint and a thin cucumber slice on the rim. Serve immediately.

Notes

Use fresh lime juice for best flavor. Avoid over-muddling mint to prevent bitterness. Chill sparkling water and glasses beforehand to keep the drink crisp. Adjust simple syrup to taste or substitute with honey or agave. Fresh cucumber juice is preferred over bottled for natural sweetness and flavor.
