These Hot Brown Sliders are mini sandwiches inspired by the classic Kentucky Hot Brown, featuring creamy Mornay sauce, roasted turkey, crispy bacon, tomato slices, and melted Swiss cheese on soft slider buns. Perfect for Derby Day or any gathering, they come together quickly and deliver rich, comforting flavors.

  • 12 slider buns, soft and fresh (Hawaiian rolls recommended)
  • 8 ounces sliced roasted turkey breast
  • 6 slices bacon, cooked until crisp and chopped
  • 12 thin slices ripe tomato
  • 4 ounces Swiss cheese, sliced thin (Gruyère as alternative)
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour (or gluten-free flour blend)
  • 1 ½ cups whole milk, warmed
  • 1 cup shredded sharp white cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Dijon mustard
  • Salt and freshly ground black pepper to taste
  • Optional garnishes: chopped fresh parsley or chives, hot sauce

Instructions

  1. Cook bacon until crisp (about 15 minutes at 400°F or in a skillet over medium heat), then chop into bite-sized pieces and set aside.
  2. In a medium saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes to form a roux without browning.
  3. Slowly whisk in warmed milk, stirring constantly until sauce thickens and coats the back of a spoon (about 5-7 minutes).
  4. Remove from heat and stir in cheddar cheese, Parmesan cheese, Dijon mustard, salt, and pepper. Add milk if sauce is too thick.
  5. Preheat oven to 350°F. Slice slider buns in half horizontally, keeping halves connected if possible.
  6. Place bottom halves of buns in a baking dish snugly. Layer with turkey, chopped bacon, and tomato slices.
  7. Pour warm Mornay sauce generously over each slider, coating layers well.
  8. Top with Swiss cheese slices and cover with top halves of buns.
  9. Bake uncovered for 15-18 minutes until cheese is melted and bubbly and buns are toasted. Optionally broil for 2-3 minutes for a golden top, watching closely.
  10. Remove from oven and let rest for 5 minutes. Garnish with parsley or chives if desired before serving.

Notes

Use quality butter and cheese for best sauce flavor. Pat turkey dry if moist to avoid soggy buns. Assemble sliders shortly before baking to prevent sogginess. Broil step is optional but adds a golden crust—watch carefully. For dairy-free, substitute butter and milk with plant-based alternatives and use dairy-free cheese. For gluten-free, use gluten-free buns and flour substitute.
