  • 1 1/2 cups (180 g) powdered sugar, sifted
  • 1 tsp vanilla extract

Instructions

  1. Mix dry ingredients: whisk together flour, ground ginger, cinnamon, cloves, baking soda, and salt in a medium bowl.
  2. Cream butter and sugar: beat softened butter and brown sugar until fluffy and light, about 3-4 minutes.
  3. Add wet ingredients: beat in egg, molasses, and vanilla extract until fully combined.
  4. Combine dry and wet: gradually add flour mixture to wet ingredients, mixing on low speed until just combined.
  5. Chill dough: shape dough into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
  6. Roll and cut: preheat oven to 350°F (175°C). Roll dough to 1/4-inch thickness and cut with 2-inch round cookie cutter.
  7. Bake: place cookies 1 inch apart on parchment-lined baking sheets and bake for 10-12 minutes until edges are set and beginning to brown. Cool on baking sheet 5 minutes, then transfer to wire rack to cool completely.
  8. Prepare filling: beat cream cheese and softened butter until smooth. Gradually add powdered sugar and vanilla extract, beat until fluffy. Add pinch of salt if desired.
  9. Assemble cookies: spread or pipe about 1 tablespoon of filling onto one cookie, top with another cookie and gently press to spread filling evenly.
