A refreshing and hydrating tropical drink made with fresh pineapple, coconut water, and lime juice, with no added sugar. Perfect for hot summer days and gatherings.

Ingredients

  • 3 cups fresh pineapple, peeled and chopped
  • 2 cups natural, unsweetened coconut water
  • Juice of 1 to 2 fresh limes (about 2 tablespoons or 30 ml)
  • 1 to cups cold water
  • Ice cubes, as needed
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Peel and chop about 3 cups of fresh pineapple into chunks.
  2. Roll the limes on the counter, then slice and squeeze out the juice from 1 to 2 limes.
  3. Add pineapple chunks, coconut water, fresh lime juice, and 1 cup of cold water into a blender.
  4. Blend on high for about 1 minute until smooth and creamy.
  5. Taste and add up to ½ cup more cold water if needed, then pulse briefly to mix.
  6. Optional: Pour the mixture through a fine mesh strainer or cheesecloth for a pulp-free drink.
  7. Chill and serve over ice cubes, garnished with fresh mint leaves if desired.

Notes

Use ripe pineapple for best sweetness. Avoid over-blending to keep flavors fresh. Adjust water to taste for preferred strength. Keep chilled and consume within 24 hours. Frozen pineapple can be used if fresh is unavailable. Optional additions include coconut milk for creaminess or fresh herbs for flavor.
