  • 2 medium English cucumbers, thinly sliced
  • 4 ounces feta cheese, crumbled
  • 2 teaspoons everything bagel seasoning
  • 1/4 small red onion, thinly sliced
  • 2 tablespoons fresh dill, chopped (optional)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Wash and dry the cucumbers thoroughly. Slice into thin rounds about 1/8-inch thick using a sharp knife or mandoline.
  2. Slice the red onion into very thin half-moons. Soak in cold water for 5 minutes if you want to reduce sharpness, then drain well.
  3. In a small bowl, whisk together the olive oil, lemon juice, a pinch of salt, and black pepper.
  4. In a mixing bowl, toss the cucumber slices, red onion, and chopped dill with the dressing until lightly coated.
  5. Sprinkle the crumbled feta evenly over the salad, then dust with everything bagel seasoning. Toss gently to combine.
  6. Chill the salad in the refrigerator for at least 10 minutes before serving for best flavor.

Use English cucumbers for best texture and less bitterness. Slice cucumbers thinly to avoid sogginess. Adjust salt carefully due to salty feta and seasoning. Chill salad before serving to enhance flavors. For dairy-free, substitute feta with vegan cheese or seasoned tofu.
