  • 8 thick slices brioche or challah bread, preferably day old
  • 8 oz (225 g) cream cheese, softened
  • 1 cup fresh strawberries, hulled and sliced
  • 4 large eggs, room temperature
  • 1 cup (240 ml) whole milk or 2%
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 2 tbsp granulated sugar
  • 2 tbsp unsalted butter, for cooking
  • Powdered sugar, for dusting (optional)
  • Maple syrup or honey, for serving

Instructions

  1. Prepare the cream cheese filling by beating the softened cream cheese with 1 tablespoon of granulated sugar until smooth and fluffy using an electric mixer or whisk (2-3 minutes).
  2. Gently fold in the sliced strawberries into the cream cheese mixture without crushing them. Set aside.
  3. Cut a pocket or slit halfway through the center of each slice of brioche bread, being careful not to cut all the way through.
  4. Spread about 2 tablespoons of the cream cheese-strawberry mixture inside each bread pocket using a butter knife or small spatula. Press gently to close the bread around the filling.
  5. In a large bowl, whisk together eggs, milk, vanilla extract, cinnamon, and remaining granulated sugar until smooth and slightly frothy.
  6. Heat a skillet or griddle over medium heat and add 1 tablespoon of butter, swirling to coat the surface.
  7. Dip each stuffed bread slice into the custard mixture, soaking for 15-20 seconds per side without oversoaking.
  8. Place the soaked bread slices onto the hot pan and cook for 3-4 minutes per side until golden brown and cooked through, with warm and creamy filling inside.
  9. Keep cooked slices warm on a wire rack in a 200°F (93°C) oven if cooking in batches.
  10. Serve immediately, dusted with powdered sugar and drizzled with maple syrup or honey.

Notes

Use day-old brioche or challah bread for best custard absorption and structure. Pat strawberries dry if too juicy to avoid soggy filling. Flip gently with a wide spatula to keep filling intact. For vegan version, use dairy-free cream cheese, plant milk, and flax or chia egg substitute. Gluten-free bread can be used but texture may vary.
