A light, elegant no-bake tiramisu featuring creamy mascarpone, fresh raspberries, and a subtle rose water aroma, perfect for summer evenings and easy to prepare in under 30 minutes.

  • 1 cup (240 ml) heavy cream, cold
  • 1/3 cup (65 g) granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon rose water
  • 2 cups (300 g) fresh raspberries
  • 2 tablespoons raspberry jam or preserves
  • 24 ladyfinger cookies (savoiardi)
  • 1/2 cup (120 ml) raspberry juice or mild fruit syrup
  • Fresh raspberries (for garnish)
  • Edible rose petals (optional, for garnish)
  • Light dusting of powdered sugar (for garnish)

Instructions

  1. Prepare the Cream Mixture (10 minutes): In a chilled mixing bowl, combine mascarpone cheese, granulated sugar, and vanilla extract. Blend with an electric mixer on medium speed until smooth and creamy. In a separate bowl, whip cold heavy cream until stiff peaks form (3-4 minutes). Gently fold whipped cream into mascarpone mixture using a rubber spatula. Stir in rose water gently.
  2. Prepare the Raspberry Layer (5 minutes): In a small bowl, combine fresh raspberries with raspberry jam. Lightly mash some raspberries to release juice but keep most whole.
  3. Soak the Ladyfingers (5 minutes): Pour raspberry juice or fruit syrup into a shallow dish. Quickly dip each ladyfinger for 1-2 seconds, then lay flat in the serving dish to form the first layer.
  4. Layer the Tiramisu (10 minutes): Spoon half the mascarpone cream over soaked ladyfingers, smooth evenly. Spread half the raspberry mixture on top. Repeat with another layer of dipped ladyfingers, then remaining mascarpone cream and raspberry mixture.
  5. Chill and Set (at least 4 hours or overnight): Cover dish with plastic wrap and refrigerate for a minimum of 4 hours, preferably overnight.
  6. Garnish and Serve: Just before serving, dust top with powdered sugar, sprinkle fresh raspberries, and optionally scatter edible rose petals.

Notes

Use fresh raspberries for best texture and flavor; frozen raspberries can be used if thawed gently. Avoid over-soaking ladyfingers to prevent sogginess. Rose water is potent; use sparingly. Chill tiramisu overnight for best flavor and texture. For gluten-free, use almond flour ladyfinger-style cookies. For dairy-free, substitute mascarpone with coconut cream-based alternative and heavy cream with coconut milk whipping cream.
