Easy Slow Cooker Teriyaki Chicken with Pineapple

A simple and delicious slow cooker recipe featuring tender chicken breasts cooked in a sweet and savory teriyaki sauce with juicy pineapple chunks. Perfect for busy weeknights and family dinners.

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup teriyaki sauce
  • 1 can (20 ounces) pineapple chunks, drained
  • 2 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated (optional)
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 2 green onions, chopped
  • 1 tablespoon toasted sesame seeds

Instructions

  1. In a mixing bowl, whisk together teriyaki sauce, honey, rice vinegar, minced garlic, and grated fresh ginger if using.
  2. Place chicken breasts in the bottom of the slow cooker. Leave whole or cut into large chunks as preferred.
  3. Pour the teriyaki sauce mixture evenly over the chicken, coating each piece well.
  4. Spread the drained pineapple chunks on top of the chicken.
  5. Cover and cook on low for 4 to 5 hours, or until chicken is tender and reaches an internal temperature of 165°F (74°C).
  6. Carefully remove chicken and pineapple to a serving dish.
  7. Mix cornstarch with water to make a slurry, stir into the slow cooker sauce, and turn heat to high.
  8. Cook uncovered for 5-10 minutes, stirring occasionally, until sauce thickens to a glossy glaze.
  9. Return chicken and pineapple to the slow cooker or serve sauce poured over the chicken.
  10. Garnish with chopped green onions and toasted sesame seeds before serving.

Notes

Browning chicken before slow cooking is optional but adds flavor. Use tamari for gluten-free teriyaki sauce. Thicken sauce with cornstarch slurry for a glossy finish. Broil finished chicken for 2-3 minutes for extra caramelization if desired. Avoid lifting the slow cooker lid frequently to maintain heat.
