  • 2 medium yellow onions, sliced
  • 4 garlic cloves, smashed
  • 2 cups beef broth (low sodium recommended)
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and freshly cracked black pepper, to taste
  • 68 French rolls or hoagie buns
  • 68 slices Swiss cheese (optional)

Instructions

  1. Trim excess fat from the chuck roast if very thick. Place sliced onions and smashed garlic cloves at the bottom of the slow cooker.
  2. Season the roast generously on all sides with salt, pepper, and dried thyme. Place the roast on top of the onions and garlic.
  3. Pour in 2 cups beef broth and 2 tablespoons Worcestershire sauce around the roast, avoiding pouring directly on top. The liquid should come about halfway up the meat.
  4. Cover and cook on low for 8-9 hours or on high for 4-5 hours until the roast shreds easily with a fork.
  5. Remove the roast and set aside to rest. Strain the cooking liquid into a saucepan, skim off excess fat, and simmer on medium heat until slightly reduced, about 10-15 minutes. Adjust seasoning as needed.
  6. Shred the roast into bite-sized pieces using two forks or tongs. Optionally, toss shredded beef back into the au jus to soak up extra flavor.
  7. Slice the French rolls and layer with shredded beef. Add Swiss cheese slices if using, and briefly heat in a skillet or oven until cheese melts.
  8. Serve sandwiches warm with hot au jus in small bowls for dipping.

Notes

Save some au jus before shredding beef to reheat later to keep meat juicy. Skim fat from au jus for a less greasy sauce. For thicker au jus, reduce longer or add cornstarch slurry. Avoid lifting slow cooker lid during cooking to maintain heat. Use gluten-free rolls or lettuce wraps for gluten-free option. Omit cheese or use plant-based cheese for dairy-free.
