  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • 1 kiwi, peeled and thinly sliced
  • Optional: Red raspberries or blackberries for extra color and texture

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, cream together softened butter and granulated sugar until light and fluffy, about 3 to 4 minutes using an electric mixer.
  3. Add the egg and vanilla extract, mixing until fully combined.
  4. In a separate bowl, whisk together all-purpose flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the butter mixture, mixing on low speed until dough forms. The dough should be soft but not sticky. If too wet, add a tablespoon more flour.
  6. Press the dough evenly into a prepared 9×13-inch baking pan, smoothing it out to the edges.
  7. Bake for 12-15 minutes or until edges are lightly golden. The center may look slightly soft but will firm as it cools.
  8. Cool the crust completely on a wire rack.
  9. Beat softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Add optional lemon juice if desired.
  10. Spread the cream cheese mixture evenly over the cooled cookie crust using a spatula.
  11. Arrange sliced strawberries, blueberries, and kiwi on top in a patriotic pattern.
  12. Refrigerate the fruit pizza for at least 30 minutes before serving to let flavors meld and set.
  13. Pat fruit dry before placing on cream cheese layer if fruit is juicy to prevent sogginess.
