These peppermint brownie bites are quick, easy, and perfect for holiday gatherings. They combine a rich, fudgy chocolate base with a refreshing peppermint crunch from crushed candy canes.

  • 1 box of brownie mix (recommend Ghirardelli for best fudgy texture)
  • 2 large eggs, room temperature
  • 1/3 cup vegetable oil or melted butter
  • 1/4 cup water
  • 1/2 cup crushed candy canes or peppermint candies (firm, non-sticky)
  • Optional: 1/4 cup mini chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease mini muffin tin or line silicone molds with non-stick spray.
  2. In a mixing bowl, whisk together brownie mix, eggs, vegetable oil (or melted butter), and water until just combined.
  3. Spoon batter evenly into each mini cup, filling about 3/4 full.
  4. Sprinkle about 1/2 teaspoon of crushed candy canes on each brownie bite.
  5. Bake for 15-18 minutes. Check at 15 minutes with a toothpick; it should come out with moist crumbs but not wet batter.
  6. Let brownie bites cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. Optional: Drizzle melted white chocolate over cooled bites or sprinkle extra crushed candy cane before serving.

Do not overfill molds (fill about 3/4 full). Use room temperature eggs for smoother batter. Crush candy canes just before baking to keep crunch. Check doneness with toothpick for moist crumbs.
