These crispy cranberry brie bites are quick, easy, and perfect for entertaining. They combine tart cranberries, creamy brie, and a flaky puff pastry shell for a crowd-pleasing appetizer.

  • 1 package puff pastry sheets, thawed
  • 8 ounces brie cheese, rind removed
  • ½ cup cranberry sauce (homemade or store-bought)
  • A handful fresh cranberries (optional, for garnish)
  • ¼ cup walnuts or pecans, chopped and toasted (optional)
  • 12 tablespoons honey
  • 1 large egg, beaten
  • A few sprigs fresh thyme, leaves only (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Unfold the thawed puff pastry sheets on a lightly floured surface. Cut the pastry into 12 equal squares, approximately 3 inches each. Keep chilled if not using immediately.
  3. Gently press each square into the cups of a mini muffin tin to form little pastry cups.
  4. Place about 1 tablespoon of brie cheese into each pastry cup, cutting the brie into small cubes for even melting.
  5. Spoon about 1 teaspoon of cranberry sauce over the brie in each cup. Sprinkle toasted chopped walnuts or pecans on top if using.
  6. Beat the egg in a small bowl and lightly brush the edges of the pastry squares with the egg wash.
  7. Bake in the preheated oven for 15-18 minutes, or until the pastry is puffed and golden and the brie is melted and bubbly. Watch closely starting at 12 minutes to avoid burning.
  8. Remove from the oven and let cool slightly. Drizzle with honey and scatter fresh thyme leaves and a few fresh cranberries on top for garnish.
  9. Serve warm for best flavor and texture.

Notes

Thaw puff pastry completely but keep it cool until cutting to avoid stickiness. Removing the brie rind is recommended for better texture. Egg wash promotes browning and crispness. Watch the oven carefully to prevent burning. Can be made ahead by assembling and refrigerating, then brushing egg wash and baking before serving. Leftovers reheat well in the oven at 350°F for 5-7 minutes to restore crispiness.
