  • 1 cup (240 ml) water
  • 2 tablespoons unsalted butter, softened
  • 1/4 teaspoon salt
  • 2 large eggs, room temperature
  • Vegetable oil for frying (neutral oil like canola or sunflower)
  • 1/2 cup (100 g) granulated sugar
  • 1 tablespoon ground cinnamon
  • For the chocolate dipping sauce:
  • 4 ounces (115 g) dark chocolate chips or chopped dark chocolate
  • 1/2 cup (120 ml) heavy cream
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a medium saucepan, combine 1 cup water, 2 tablespoons unsalted butter, and 1/4 teaspoon salt. Bring to a rolling boil over medium-high heat.
  2. Remove the pan from heat. Quickly stir in 1 cup all-purpose flour with a wooden spoon until the mixture forms a ball and pulls away from the sides, about 1 minute.
  3. Transfer the dough to a mixing bowl and let it cool for 5 minutes to prevent eggs from scrambling.
  4. Beat in 2 large eggs, one at a time, mixing well after each addition until the dough is smooth and glossy. The dough will be sticky but elastic.
  5. Pour vegetable oil into a deep frying pan to a depth of about 2 inches. Heat to 350°F (175°C) using a thermometer or test with a small dollop of dough.
  6. Using two teaspoons, scoop small portions of dough and carefully drop them into the hot oil. Fry in batches without overcrowding.
  7. Fry the bites for 2-3 minutes, turning occasionally with a slotted spoon until golden brown and crispy all over.
  8. Remove churro bites with a slotted spoon and drain on paper towels. While still warm, toss in a mixture of 1/2 cup granulated sugar and 1 tablespoon ground cinnamon until fully coated.
  9. To make the chocolate sauce, heat 1/2 cup heavy cream in a small saucepan until just simmering. Pour over 4 ounces chopped dark chocolate in a bowl. Let sit for 2 minutes, then stir until smooth.
  10. Stir in 1/2 teaspoon vanilla extract and a pinch of salt into the chocolate sauce.
  11. Serve the warm churro bites with the chocolate dipping sauce on the side immediately for best crispness and flavor.
