  • 1 cup shredded sharp cheddar cheese
  • 1/4 teaspoon garlic powder
  • Medium-sized fresh jalapeños, halved and seeded
  • Thin-cut bacon slices (one slice per popper bite)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Wearing gloves, slice each jalapeño in half lengthwise and scrape out the seeds and membranes unless you prefer more heat.
  3. In a medium bowl, combine softened cream cheese, shredded sharp cheddar, and garlic powder. Stir until smooth and evenly mixed.
  4. Spoon the cheese mixture into each jalapeño half, filling generously but not overstuffing.
  5. Wrap each jalapeño half with a slice of bacon, cutting the bacon in half if needed. Secure with a toothpick if necessary.
  6. Arrange the wrapped poppers evenly spaced on the baking sheet.
  7. Bake for 20-25 minutes until bacon is crispy. Optionally broil for 1-2 minutes at the end for extra crispness, watching carefully.
  8. Remove from oven and let cool for 5 minutes before serving.
