This recipe delivers crispy, juicy pork chops made quickly and easily in the air fryer, perfect for busy weeknights or casual dinners.

Ingredients

Scale
  • 2 bone-in pork chops, about 1 inch thick (68 oz / 170225 g each)
  • 1 cup buttermilk (or milk/plain yogurt) for brining
  • 1 tablespoon kosher salt (for brining and seasoning)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 1 tablespoon olive oil or avocado oil
  • Optional: dried thyme or rosemary
  • Optional: panko breadcrumbs for extra crunch

Instructions

  1. Brine the pork chops (optional but recommended): In a large bowl, mix 1 cup buttermilk with 1 tablespoon kosher salt. Submerge pork chops in the brine and refrigerate for 20-30 minutes.
  2. Preheat the air fryer to 400°F (200°C) and let it warm up for about 5 minutes.
  3. Prepare the seasoning mix by combining garlic powder, onion powder, smoked paprika, black pepper, salt, and optional dried herbs in a shallow dish.
  4. Remove pork chops from the brine and pat dry thoroughly with paper towels.
  5. Brush both sides of the pork chops lightly with olive or avocado oil.
  6. Press the seasoning mix evenly onto both sides of the pork chops.
  7. Place the pork chops in the air fryer basket in a single layer without overlapping.
  8. Cook for 12-15 minutes, flipping halfway through (around 6-7 minutes), until golden brown and crispy.
  9. Check internal temperature with a meat thermometer; pork chops are done at 145°F (63°C).
  10. Transfer pork chops to a plate and let rest for 5 minutes before serving.

Notes

Brining the pork chops is optional but highly recommended for juiciness. Pat chops dry thoroughly before seasoning to ensure crispiness. Flip chops halfway through cooking for even browning. Let chops rest after cooking to keep juices locked in. Avoid overcrowding the air fryer basket to maintain crispiness. Use a meat thermometer to avoid overcooking.
