A rich, tangy, and creamy buffalo chicken dip made effortlessly in the slow cooker, perfect for game nights and parties.

Ingredients

Scale
  • 3 cups shredded cooked chicken (rotisserie chicken recommended)
  • 8 oz cream cheese, softened
  • 1/2 cup buffalo hot sauce (e.g., Frank’s RedHot)
  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 tablespoons chopped green onions (for garnish)
  • Celery sticks and tortilla chips (for serving)

Instructions

  1. Prep your chicken: Remove skin and bones from rotisserie chicken and shred (about 3 cups).
  2. Soften the cream cheese by letting it sit at room temperature for 15-20 minutes.
  3. In a medium bowl, combine softened cream cheese, buffalo hot sauce, and ranch dressing. Stir until smooth.
  4. Add garlic powder and onion powder to the mixture and stir to combine.
  5. Place shredded chicken in the slow cooker insert and pour the cream cheese mixture over it. Stir until chicken is fully coated.
  6. Sprinkle shredded cheddar and mozzarella cheese evenly over the top.
  7. Cover and cook on low for 1.5 to 2 hours. Check at 1 hour, stir gently, and ensure it is hot and bubbly. Continue cooking if needed.
  8. Once cooked, sprinkle chopped green onions on top.
  9. Serve warm with celery sticks, tortilla chips, or crusty bread.

Notes

If the dip is too thick after cooking, stir in a splash of milk or more ranch dressing to loosen. Use room temperature cream cheese to avoid lumps. Adjust heat by varying the amount of hot sauce or adding honey to mellow spice. Keep warm on slow cooker ‘warm’ setting after cooking. For dairy-free or keto adaptations, substitute ingredients accordingly.
