  • 1 cup (150 g) roasted red peppers, jarred or homemade
  • 1/4 cup (60 ml) tahini
  • 2 cloves garlic, minced
  • 2 tablespoons (30 ml) fresh lemon juice
  • 2 tablespoons (30 ml) extra virgin olive oil, plus more for drizzling
  • 1/2 teaspoon ground cumin
  • Salt to taste
  • 1 tablespoon za’atar spice blend
  • 4 rounds pita bread, cut into triangles
  • Sea salt for sprinkling pita chips
  • Optional: pinch of smoked paprika or cayenne for a subtle kick

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. Cut the pita bread into triangles. Arrange in a single layer on the baking sheet. Drizzle with 1 tablespoon olive oil and sprinkle with sea salt and 1 teaspoon za’atar. Toss gently to coat evenly.
  3. Bake pita chips for 8-12 minutes until golden and crispy, flipping halfway through. Remove and cool.
  4. In a food processor, combine chickpeas, roasted red peppers, tahini, minced garlic, lemon juice, olive oil, cumin, and a pinch of salt.
  5. Pulse the mixture, scraping down the sides occasionally, until smooth and creamy (about 2-3 minutes). Add 1-2 tablespoons water or reserved chickpea liquid if too thick.
  6. Taste and adjust seasoning with salt, lemon juice, or garlic. For smoky flavor, add a pinch of smoked paprika or cayenne and pulse once more.
  7. Transfer hummus to a serving bowl. Create shallow swirls on the surface with the back of a spoon. Drizzle olive oil and sprinkle generously with za’atar.
  8. Serve immediately with warm, crispy pita chips.

Notes

Blend thoroughly for a creamy texture; add aquafaba or water if too thick. Use fire-roasted peppers for best flavor. Flip pita chips halfway through baking for even crispness. Let pita chips cool fully for maximum crunch. For gluten-free, substitute pita chips with gluten-free crackers or veggie sticks.
