  • 1/2 cup chopped sun-dried tomatoes (packed in oil preferred)
  • 1 cup heavy cream (240ml)
  • 1/2 cup chicken broth (120ml)
  • 1/2 cup grated Parmesan cheese (50g)
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 2 tablespoons butter (28g), melted
  • A handful of fresh basil or parsley, chopped (for garnish)

Instructions

  1. Trim any excess fat from chicken breasts and pat dry with paper towels.
  2. Place chicken breasts in a single layer at the bottom of the crockpot.
  3. Sprinkle Italian seasoning, red pepper flakes (if using), salt, and pepper evenly over the chicken.
  4. Scatter minced garlic and chopped sun-dried tomatoes over the chicken.
  5. In a small bowl, whisk together heavy cream, chicken broth, and melted butter.
  6. Pour the cream mixture evenly over the chicken in the crockpot.
  7. Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours until chicken is tender and reaches an internal temperature of 165°F (74°C).
  8. About 15 minutes before serving, sprinkle grated Parmesan cheese over the chicken and stir gently to combine. Recover and cook until cheese melts and sauce thickens slightly.
  9. Once done, stir gently, taste and adjust seasoning if needed.
  10. Garnish with chopped fresh basil or parsley before serving.

Notes

Avoid lifting the lid during cooking to maintain steady heat. If sauce is watery, stir in a teaspoon of cornstarch mixed with cold water and cook on high for 10 more minutes. Optional browning of chicken adds flavor but is not required. Use full-fat dairy for best texture. Check chicken early if your slow cooker runs hot to avoid overcooking.
