A quick and easy low-carb dinner featuring tender chicken breasts smothered in a creamy cheese sauce with crispy bacon, perfect for keto and low-carb diets.

  • 1.5 lbs boneless, skinless chicken breasts
  • 8 slices bacon
  • 8 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • ½ cup sour cream
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tbsp chopped green onions (optional)
  • Salt and pepper to taste

Instructions

  1. Heat skillet over medium heat. Cook bacon strips until crisp, about 6-8 minutes, turning occasionally. Transfer bacon to paper towel-lined plate to drain. Leave about 1 tablespoon bacon fat in skillet.
  2. Pat chicken breasts dry and season both sides with salt, pepper, garlic powder, and onion powder.
  3. Place chicken breasts in skillet with bacon fat over medium heat. Cook 5-6 minutes per side until golden brown and internal temperature reaches 165°F. Remove chicken and set aside.
  4. Lower heat to medium-low. Add softened cream cheese and sour cream to skillet. Stir continuously until smooth and warmed through, about 2-3 minutes.
  5. Stir in shredded cheddar cheese and crumble most of the cooked bacon into the sauce, reserving some for garnish. Mix until cheese melts completely.
  6. Return chicken breasts to skillet, spoon sauce over them. Simmer together for 3-4 minutes to absorb flavors.
  7. Garnish with chopped green onions and reserved bacon pieces before serving.

Notes

Use room temperature cream cheese for smooth sauce. If sauce is too thick, add a splash of chicken broth or heavy cream. Cook bacon on medium heat to avoid burning. For dairy-free version, substitute cream cheese and sour cream with coconut cream and dairy-free alternatives.
