Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch baking dish with butter or nonstick spray.
  2. Wash and slice about 6 medium peaches to yield 4 cups. Toss them gently in a large bowl with 1/2 cup granulated sugar, 1/4 cup brown sugar, 1 tablespoon fresh lemon juice, 1 teaspoon ground cinnamon, 2 tablespoons all-purpose flour, 2 tablespoons bourbon, and a pinch of salt. Let sit for 10 minutes to macerate.
  3. In a skillet over medium heat, melt 3 tablespoons of unsalted butter. Stir continuously as it foams and turns golden brown with a nutty aroma (about 3-4 minutes). Remove from heat immediately to avoid burning.
  4. In a separate bowl, combine 1 cup rolled oats, 1/2 cup all-purpose flour, 1/4 cup brown sugar, 1 teaspoon vanilla extract, and a pinch of salt. Pour in the browned butter and stir until the mixture is crumbly and coated.
