  • ¼ cup (50g) brown sugar
  • ¾ cup (180ml) milk (whole milk preferred, almond or oat milk for dairy-free)
  • 1 teaspoon vanilla extract
  • 1 large egg (room temperature)
  • 2 tablespoons (28g) melted butter (vegetable oil can be used as substitute)
  • ½ cup (90g) chocolate chips (semi-sweet or dark chocolate)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine rolled oats, baking powder, ground cinnamon, and salt. Stir until evenly mixed.
  3. In a separate bowl, beat the egg with brown sugar, milk, melted butter, and vanilla extract until smooth and combined.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined. Do not overmix.
  5. Fold in chocolate chips evenly through the batter, saving a few to sprinkle on top if desired.
  6. Pour the batter into a greased 8×8-inch baking pan or divide into ramekins. Smooth the top gently with a spatula.
  7. Bake for 25-30 minutes until the top is golden with a slight jiggle in the center. A toothpick should come out with a few moist crumbs but no raw batter.
  8. Let cool slightly for 5 minutes before serving to help the oats set.
