Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup diced tomatoes
  • 1 cup black beans, rinsed and drained
  • 2 cups tortilla chips, crushed lightly
  • 1 cup sour cream
  • 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • Chopped lettuce
  • Diced tomatoes
  • Sliced olives
  • Sour cream or guacamole
  • Chopped cilantro

Instructions

  1. Preheat your oven to 375Β°F (190Β°C).
  2. Heat a large skillet over medium heat and cook the ground beef until browned, breaking it up with a spoon. Drain excess grease.
  3. Stir in taco seasoning and diced tomatoes (and black beans, if using). Cook for 2-3 minutes until combined and heated through.
  4. Spread half of the crushed tortilla chips evenly across the bottom of a 9×13-inch casserole dish.
  5. Spoon the seasoned beef mixture over the tortilla chips, spreading it evenly.
  6. Spread a layer of sour cream over the beef mixture gently.
  7. Sprinkle shredded cheese generously over the sour cream layer.
  8. Spread the remaining crushed tortilla chips over the cheese layer.
  9. Bake the casserole in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven and let cool for 5-10 minutes before serving.
  11. Serve with your favorite taco toppings like lettuce, tomatoes, olives, or guacamole.
