These sliders feature thinly sliced ribeye steak, caramelized onions, and melted provolone cheese on soft slider buns, delivering a quick, easy, and crowd-pleasing appetizer perfect for any gathering.

  • 1 pound ribeye steak, thinly sliced
  • 1 large sweet onion, sliced
  • 810 slices provolone cheese
  • 8 slider buns
  • 3 tablespoons unsalted butter, melted
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 teaspoon Worcestershire sauce (optional)

Instructions

  1. Thinly slice ribeye steak against the grain into strips about 1/8 inch thick. Slice the onion into thin half-moons and set both aside.
  2. Heat olive oil in a large skillet over medium heat. Add sliced onions and a pinch of salt. Sauté for 8–10 minutes until translucent and caramelized, stirring occasionally.
  3. Push onions to the side of the skillet. Add ribeye slices, season with garlic powder, salt, and pepper. Cook for 3–4 minutes until browned but tender. Add Worcestershire sauce if using and mix with onions.
  4. Preheat oven to 350°F (175°C). Slice slider buns in half horizontally, keeping tops and bottoms together.
  5. Place bottom halves of buns in a baking dish. Spoon steak and onion mixture evenly over buns. Layer provolone slices on top (about 1 slice per bun). Cover with top halves.
  6. Brush melted butter generously over slider tops.
  7. Bake sliders for 12–15 minutes until cheese is melted and tops are golden brown.
  8. Remove from oven, let cool a few minutes, then slice between buns to separate sliders. Serve warm.

Notes

Partially freeze steak for 20 minutes before slicing for easier thin cuts. Cook onions low and slow to caramelize without burning. Do not overcrowd pan to ensure proper searing. Brush butter on buns for golden crust. Assemble and bake immediately after cooking for best texture.
