  • 34 pounds corned beef brisket (with spice packet included)
  • 1 large yellow onion, quartered
  • 45 garlic cloves, smashed
  • 4 medium carrots, cut into chunks
  • 4 medium potatoes (Yukon Gold or red), quartered
  • 1 small head cabbage, cut into wedges
  • 3 cups beef broth (low sodium preferred)
  • 2 bay leaves
  • Pickling spice packet (or 1 tablespoon pickling spice blend)
  • 1 teaspoon black peppercorns
  • 1 teaspoon mustard seeds (optional)
  • 1 cup water

Instructions

  1. Rinse your corned beef brisket under cold water for about 1 minute to remove excess salt. Pat dry with paper towels.
  2. Place the quartered onion, smashed garlic cloves, carrots, and potatoes at the bottom of the slow cooker.
  3. Place the brisket on top of the vegetables, fat side up.
  4. Pour the beef broth and water around the brisket.
  5. Sprinkle the pickling spice packet, black peppercorns, mustard seeds, and bay leaves evenly over the meat and into the liquid.
  6. Cover and cook on LOW for 8 to 10 hours.
  7. About 1.5 hours before the cooking time ends, add the cabbage wedges on top.
  8. Check tenderness with tongs; the brisket should pull apart easily with a fork. If not, cook an additional 30 minutes.
  9. Remove the brisket and vegetables carefully. Let the meat rest for 10 minutes before slicing thinly against the grain.
  10. Serve slices with cooked vegetables and spoon some broth over the top.

Notes

Rinsing the brisket reduces excess saltiness. Cook on low heat for best tenderness. Add cabbage late to avoid mushiness. Rest meat before slicing to keep it juicy. If slow cooker runs hot, check after 7 hours to prevent overcooking.
