  • 2 pounds Yukon Gold or red potatoes, quartered
  • 3 tablespoons olive oil
  • 2 sprigs fresh rosemary, finely chopped
  • Salt and freshly ground black pepper to taste

Instructions

  1. Rinse the corned beef brisket under cold water to remove excess salt and pat dry with paper towels.
  2. Place the corned beef in a large pot or Dutch oven. Add enough water (about 8 cups) to cover the meat completely.
  3. Add bay leaves, black peppercorns, smashed garlic cloves, mustard seeds, and the spice packet from the brisket.
  4. Bring to a boil over medium-high heat, then reduce to a low simmer. Cover and cook gently for 2.5 to 3 hours or until the beef is fork-tender.
  5. Preheat the oven to 425°F (220°C). Quarter the potatoes and toss them with olive oil, chopped rosemary, salt, and pepper.
  6. Spread the potatoes evenly on a roasting pan or baking sheet.
  7. Roast the potatoes in the oven for 35-40 minutes, turning halfway through, until golden brown and crispy on the outside and fluffy inside.
  8. Once the corned beef is tender, remove it from the pot and let it rest for 10 minutes on a cutting board.
  9. Slice the beef against the grain into thin slices.
  10. Optional: Add carrots or cabbage to the simmering broth during the last 30 minutes of cooking, then drain and serve alongside beef and potatoes.
