  • 1 tablespoon black peppercorns

  • 45 whole cloves

Instructions

  1. Rinse the corned beef brisket under cold water to remove excess brine. Pat dry with paper towels and trim any large fat caps if desired.
  2. Place quartered onions, smashed garlic, and carrots at the bottom of the slow cooker.
  3. Sprinkle peppercorns, mustard seeds, cloves, and bay leaves over the vegetables.
  4. Place the brisket on top of the vegetables, fat side up.
  5. Pour in 4 cups of beef broth or water, ensuring it covers at least half the brisket.
  6. Cover and cook on low for 8 to 10 hours or on high for 4 to 5 hours. Avoid opening the lid frequently.
  7. About 1 to 2 hours before the end of cooking, add halved potatoes if using.
  8. Check tenderness by piercing with a fork; meat should be tender and easy to pull apart.
  9. Remove brisket and let rest for 15 minutes before slicing against the grain.
  10. Serve sliced brisket with vegetables and potatoes, spooning some broth over for extra moisture and flavor.
