  • 1 pound (450 grams) fresh radishes, trimmed and halved or quartered
  • 3 tablespoons (43 grams) unsalted butter, melted or softened
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon sea salt, coarse or flaky
  • ½ teaspoon freshly ground black pepper
  • 1 clove garlic, minced (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse radishes under cold water, trim greens off, and halve or quarter based on size. Pat dry with a kitchen towel.
  3. In a mixing bowl, combine melted butter, minced garlic (if using), chopped parsley, and thyme. Add radishes and toss until evenly coated.
  4. Arrange radishes in a single layer on a baking sheet with space between pieces.
  5. Roast for 20-25 minutes, turning halfway through, until tender inside and golden brown on edges. If still firm after 25 minutes, roast an additional 3-5 minutes watching closely.
  6. Remove from oven and immediately sprinkle with sea salt and freshly ground black pepper.
  7. Serve warm.

Notes

Do not overcrowd the pan to ensure crispiness. Dry radishes thoroughly after washing to avoid steaming. Melt butter for even coating. Fresh herbs brighten flavor more than dried. Adjust roasting time for larger or denser radishes. For dairy-free, substitute butter with olive oil or vegan spread.
