Soft & Chewy Cinnamon Sugar Blondies

These blondies are warm, cozy, and utterly comforting with a buttery vanilla base and cinnamon sugar topping. Perfect for dessert or any occasion.

  • 1/2 cup unsalted butter, melted
  • 1 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a large mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth. Add the eggs and vanilla extract, and whisk until well combined.
  3. In a separate bowl, mix the flour, ground cinnamon, baking powder, and salt.
  4. Gradually fold the dry ingredients into the wet mixture using a rubber spatula. Mix until just combined—be careful not to overmix.
  5. In a small bowl, mix 2 tablespoons of granulated sugar with 1 teaspoon of ground cinnamon for the topping.
  6. Pour the batter into the prepared pan, spreading it evenly to the edges.
  7. Sprinkle the cinnamon sugar mixture evenly over the top of the batter.
  8. Place the pan in the preheated oven and bake for 25-30 minutes, or until the center is set and a toothpick inserted comes out with a few moist crumbs.
  9. Allow the blondies to cool completely in the pan. Once cooled, lift them out using the parchment paper and cut into squares.
