Savory Oyster Stuffing Recipe Perfect for Holidays

A rich and flavorful stuffing made with fresh oysters, buttery bread cubes, and fragrant herbs, perfect for holiday gatherings.

  • 1 pint fresh oysters, shucked and chopped
  • 8 cups French bread, cubed and slightly stale
  • 1/2 cup unsalted butter, melted
  • 1 cup celery, diced
  • 1 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 1/2 cups chicken or seafood stock
  • 2 tablespoons parsley, chopped
  • 2 tablespoons sage, chopped
  • 2 tablespoons thyme, chopped
  • 2 large eggs, beaten
  • Salt and pepper to taste
  • Optional: 1/4 cup dry white wine

Instructions

  1. Cut the French bread into 1-inch cubes and spread them out on a baking sheet. Let them sit out overnight or toast them in a 300°F (150°C) oven for 10-15 minutes until slightly dry.
  2. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or cooking spray.
  3. Heat the butter in a skillet over medium heat. Add the chopped onion, celery, and garlic. Cook for 5-7 minutes until softened and fragrant, stirring occasionally.
  4. Stir in the parsley, sage, and thyme. Cook for another minute, allowing the flavors to meld.
  5. In a large mixing bowl, combine the bread cubes, sautéed vegetables, and chopped oysters. Mix gently to combine.
  6. Pour the stock and optional white wine evenly over the mixture. Add the beaten eggs and season with salt and pepper. Stir until everything is well-coated.
  7. Spread the stuffing mixture into the prepared dish, pressing down slightly to create an even layer.
  8. Cover the dish with foil and bake in the oven for 30 minutes. Then remove the foil and bake for an additional 15-20 minutes until the top is golden and slightly crisp.
  9. Allow the stuffing to cool for 5 minutes before serving. Garnish with extra parsley if desired.

Notes

If the stuffing seems too dry before baking, add an extra splash of stock. If it’s overly wet, toss in a few more bread cubes to balance it out.
