Refreshing Lavender Honey Iced Tea

A soothing and delightfully refreshing iced tea combining the floral notes of lavender with the natural sweetness of honey and a bright lemon finish. Perfect for summer afternoons and gatherings.

Ingredients

  • 4 cups (1 liter) filtered water
  • 2 tablespoons dried culinary lavender (preferably organic, food-grade)
  • 3 black tea bags or 3 teaspoons loose leaf black tea
  • 3 tablespoons raw honey (adjust to taste)
  • 2 tablespoons fresh lemon juice (about 1 lemon)
  • Ice cubes as needed
  • Optional: fresh lavender sprigs for garnish
  • Optional: mint leaves for garnish

Instructions

  1. Boil 4 cups (1 liter) of filtered water in a large saucepan until rolling boil (about 5-7 minutes).
  2. Remove from heat and add 2 tablespoons dried lavender and 3 black tea bags (or loose leaf in an infuser). Cover and steep for exactly 5 minutes to avoid bitterness.
  3. Strain the tea through a fine mesh sieve into a heatproof pitcher, removing tea bags and lavender buds.
  4. While the tea is still warm, stir in 3 tablespoons raw honey until fully dissolved.
  5. Add 2 tablespoons fresh lemon juice and stir gently to combine.
  6. Let the tea cool to room temperature (about 20 minutes), then refrigerate for at least 1 hour to chill thoroughly.
  7. Serve over ice cubes and garnish with fresh lavender sprigs or mint leaves if desired.

Notes

Steep lavender for exactly 5 minutes to avoid bitterness. Stir honey into warm tea for better dissolution. Use fresh lemon juice for best flavor. Tea can be stored in the refrigerator up to 3 days. For caffeine-free version, substitute black tea with rooibos or chamomile tea bags. Vegan option: replace honey with maple syrup or agave nectar.
