A playful twist on the classic mint julep, these jello shots combine bourbon, fresh mint, and lime gelatin for a refreshing and crowd-pleasing party treat.

  • 1 package (3 oz / 85 g) lime-flavored gelatin mix (Jell-O or similar brand)
  • 1 cup (240 ml) boiling water
  • 1/2 cup (120 ml) bourbon (e.g., Buffalo Trace)
  • 1/4 cup (60 ml) cold water
  • 1/4 cup (50 g) granulated sugar
  • 1/4 cup (60 ml) fresh mint leaves, packed
  • Optional: extra mint sprigs for garnish

Instructions

  1. Infuse the Mint: In a small saucepan, combine fresh mint leaves with 1/4 cup granulated sugar and 1/4 cup cold water. Gently heat over low flame, stirring until sugar dissolves and mixture is fragrant, about 5 minutes. Remove from heat and let steep for 10 minutes, then strain out mint leaves.
  2. Dissolve the Gelatin: Pour 1 cup boiling water into a medium bowl. Sprinkle the lime gelatin powder evenly over the surface and whisk until completely dissolved, about 2 minutes.
  3. Combine Liquids: Stir in the mint-infused simple syrup (strained), followed by 1/2 cup bourbon. Mix thoroughly but gently to avoid bubbles.
  4. Pour into Cups: Arrange mini shot cups on a tray and carefully pour the mixture into each, filling about 3/4 full.
  5. Chill to Set: Refrigerate for at least 3 hours, preferably 4, until firm but jiggly. Avoid freezing.
  6. Garnish & Serve: Just before serving, garnish each jello shot with a small mint sprig or a tiny lime wedge. Serve chilled.

Notes

Bruise the mint leaves before infusing to release more flavor. Avoid overheating the mint infusion to preserve freshness. Adjust gelatin amount slightly if shots are too firm or too soft. Use good quality bourbon for best flavor. Do not freeze jello shots as it affects texture.
