A simple and elegant Bellini cocktail made with fresh peach purée and sparkling wine, perfect for brunch and celebrations.

  • 2 ripe peaches, peeled and pitted (or 1 cup white peach purée)
  • 1 bottle (750 ml) Prosecco or brut sparkling wine
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon sugar or honey (optional)
  • Ice cubes (for chilling purée)
  • Mint leaves (optional, for garnish)

Instructions

  1. Prepare the peaches by peeling and pitting 2 ripe peaches. If using frozen peaches, thaw and drain excess juice.
  2. Add peeled peaches to a blender with 1 tablespoon lemon juice and 1 teaspoon sugar or honey if desired. Blend until smooth but slightly textured. Optionally strain through a fine mesh sieve for a smoother purée.
  3. Chill the purée in the fridge or add ice cubes to cool it down for about 15 minutes.
  4. Ensure the sparkling wine is chilled to about 45°F (7°C).
  5. Pour about 2 ounces (60 ml) of peach purée into each chilled champagne flute.
  6. Slowly top off with 4-5 ounces (120-150 ml) of sparkling wine, pouring gently to preserve bubbles.
  7. Garnish with a fresh mint leaf or thin peach slice and serve immediately.

Notes

Use ripe, fragrant peaches for best flavor. Chill purée and sparkling wine well to preserve bubbles. Pour sparkling wine slowly down the side of the glass. Serve immediately for best fizz. For a smoother purée, strain through a fine mesh sieve. Adjust sweetness with sugar or honey as needed.
