Perfect Sweet Potato Pie Bites

These bite-sized sweet potato pie treats are perfect for holiday parties, potlucks, or cozy nights in. With a buttery crust and creamy spiced filling, they’re a crowd-pleaser that’s easy to make ahead.

  • 2 medium-sized sweet potatoes, peeled and cubed
  • 4 tablespoons unsalted butter, melted
  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/3 cup heavy cream
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1 package pre-made pie crust
  • Optional toppings: whipped cream or chopped pecans

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and cube the sweet potatoes. Place them on a baking sheet and roast for 20-25 minutes until fork-tender.
  3. Mash the roasted sweet potatoes until smooth. In a mixing bowl, combine mashed sweet potatoes, melted butter, brown sugar, granulated sugar, heavy cream, eggs, vanilla extract, cinnamon, and nutmeg. Blend with a hand mixer or whisk until creamy and well combined.
  4. Roll out your pie dough on a lightly floured surface. Use a round cookie cutter to cut out circles that fit snugly into the mini muffin tin. Press each circle into the tin, forming little crust cups.
  5. Spoon the sweet potato mixture into each crust, filling them just below the rim.
  6. Place the muffin tin in the oven and bake for 18-22 minutes or until the filling is set and the crust is golden brown.
  7. Allow the bites to cool in the tin for about 10 minutes, then transfer them to a wire rack.
  8. Top with whipped cream or chopped pecans if desired, and serve warm or at room temperature.
