  • 1/2 cup (120ml) heavy cream
  • 1 large egg
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 tablespoon poppy seeds
  • 1 cup (120g) powdered sugar (optional glaze)
  • 23 tablespoons lemon juice (optional glaze)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
  2. In a large mixing bowl, whisk together flour, sugar, baking powder, and salt.
  3. Add cold unsalted butter, cut into small cubes. Use a pastry cutter or fork to work the butter into the flour mixture until it resembles coarse crumbs.
  4. In a separate bowl, mix heavy cream, egg, lemon juice, lemon zest, and vanilla extract.
  5. Gradually pour the wet ingredients into the dry mixture, stirring gently until just combined. Do not overmix.
  6. Turn the dough out onto a lightly floured surface. Pat it into a circle about 1-inch thick. Cut into 8 wedges or use a round cutter for circular scones.
  7. Place the scones on the prepared baking sheet, spacing them about 2 inches apart. Brush the tops with a bit of heavy cream.
  8. Bake for 15-18 minutes, or until the tops are golden brown. Check for doneness by inserting a toothpick—it should come out clean.
  9. Optional: Mix powdered sugar with lemon juice to make a glaze. Drizzle it over the scones.
  10. Serve warm with butter, lemon curd, or your favorite jam.
