Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Pat the chicken breasts dry with a paper towel to remove excess moisture. Season both sides generously with salt and pepper.
  2. Add 2 tablespoons of olive oil to a large skillet and heat over medium-high heat until shimmering.
  3. Add the chicken breasts to the skillet and sear for about 4-5 minutes per side, or until golden brown. Remove the chicken and set aside.
  4. Reduce the heat to medium and add 3 tablespoons of unsalted butter to the skillet. Once melted, stir in 4 cloves of minced garlic and sautΓ© for 1 minute, until fragrant.
  5. Pour in 1 cup of chicken broth and 2 tablespoons of fresh lemon juice. Stir and scrape up any browned bits from the bottom of the pan.
  6. Let the sauce simmer for about 3-4 minutes, allowing it to reduce and thicken slightly.
  7. Place the seared chicken breasts back into the skillet, spooning the sauce over them. Cook for an additional 5-7 minutes, or until the internal temperature of the chicken reaches 165Β°F (74Β°C).
  8. Sprinkle 2 tablespoons of chopped fresh parsley over the chicken and sauce. Serve immediately.
