Perfect Berry Trifle Cake Recipe with 5 Creamy Layers

  • 2 cups (240g) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup (200g) granulated sugar
  • 1/2 cup (120ml) unsalted butter, softened
  • 2 large eggs, room temperature
  • 1 cup (240ml) buttermilk
  • 1 tsp vanilla extract
  • 1 cup (240ml) heavy whipping cream
  • 1/3 cup (40g) powdered sugar
  • 8 oz (225g) cream cheese, softened
  • 1/2 cup (120ml) plain Greek yogurt
  • 1 tsp vanilla extract
  • 1 cup (150g) fresh strawberries, sliced
  • 1 cup (150g) fresh blueberries
  • 1 cup (150g) fresh raspberries
  • 1 tbsp granulated sugar (optional, if berries are tart)

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, beat sugar and butter until fluffy, then add eggs one at a time.
  4. Mix in buttermilk and vanilla, then gradually fold in the dry ingredients.
  5. Divide batter evenly between pans and bake for 25-30 minutes or until a toothpick inserted comes out clean. Cool completely.
  6. Beat heavy cream and powdered sugar until stiff peaks form.
  7. In a separate bowl, beat cream cheese, yogurt, and vanilla until smooth.
  8. Gently fold whipped cream into the cream cheese mixture until well combined.
  9. Wash and prep berries. If they’re a bit tart, toss them with 1 tbsp of sugar and let them sit for 10 minutes to sweeten.
  10. Slice cooled cakes into cubes.
  11. Start layering in your trifle dish with a layer of cake cubes, followed by a layer of cream, and then a layer of berries. Repeat until your dish is full, finishing with a layer of berries on top for a beautiful presentation.
  12. Refrigerate the trifle for at least 2 hours before serving to let the flavors meld together. Serve chilled and enjoy!
