A creamy and flavorful combination of tender chicken and luscious pasta in a rich sauce, perfect for cozy dinners or quick weeknight meals.

  • 2 boneless, skinless chicken breasts, sliced thin
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup chicken broth (low-sodium preferred)
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup freshly grated Parmesan cheese
  • 8 ounces fettuccine pasta
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Boil a large pot of salted water and cook the pasta until al dente. Drain and set aside.
  2. Season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat and sear the chicken for 4–5 minutes per side until golden and cooked through. Remove from the skillet and set aside.
  3. Reduce the heat to medium in the same skillet. Add more olive oil if needed, then sautΓ© the minced garlic until fragrant, about 30 seconds.
  4. Pour in the chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer, then add the sun-dried tomatoes and Parmesan cheese. Stir until the cheese is melted and the sauce is creamy.
  5. Slice the cooked chicken and return it to the skillet. Toss in the cooked pasta, ensuring everything is coated in the sauce. Garnish with fresh basil and serve warm.

Notes

For a lighter version, use half-and-half instead of heavy cream. Add a splash of pasta water to loosen the sauce if it feels too thick.
