Irresistible Shortbread Cookies Recipe with Maple Glaze

  • 1 cup (226g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 2 cups (240g) all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup (120g) powdered sugar, sifted
  • 23 tablespoons pure maple syrup
  • 12 teaspoons milk (or non-dairy alternative)
  • Pinch of salt

Instructions

  1. Preheat your oven to 325Β°F (163Β°C). Line two baking sheets with parchment paper and set aside.
  2. In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes with a mixer.
  3. Add the vanilla extract and mix until combined.
  4. Gradually add the flour and salt, mixing until the dough comes together. It will look crumbly at first, but keep mixing until it forms a smooth dough.
  5. Turn the dough out onto a lightly floured surface. Roll it out to about 1/4-inch thickness.
  6. Use cookie cutters to cut out shapes, or simply cut into squares or rectangles for classic shortbread. Transfer the shapes to the prepared baking sheets.
  7. Bake for 12-15 minutes, or until the edges just start to turn golden. Be careful not to overbake – these should be pale and tender.
  8. Let the cookies cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.
  9. In a small bowl, whisk the powdered sugar, maple syrup, milk, and a pinch of salt until smooth. Adjust the consistency with more milk if needed – it should be thick but pourable.
  10. Once the cookies are completely cool, drizzle or spread the glaze over the tops. Let it set for about 20-30 minutes before serving.
