  • 4 ounces feta cheese
  • 2 tablespoons extra virgin olive oil
  • 1 clove garlic
  • 1 tablespoon lemon juice
  • 1/4 teaspoon red chili flakes (optional)
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Prepare the roasted red peppers: If roasting your own, preheat the broiler, place peppers on a baking sheet, and broil for 8-10 minutes until skin is blistered and blackened. Steam in a bowl covered with plastic wrap for 10 minutes, then peel off skins and remove seeds.
  2. Blend the peppers and garlic: Add roasted red peppers and garlic to a blender or food processor. Blend until smooth, about 30 seconds.
  3. Add feta cheese: Crumble feta cheese into the blender and pulse until combined and creamy.
  4. Add olive oil and lemon juice: Slowly drizzle in olive oil while blending. Add lemon juice and blend until the dip has a silky texture.
  5. Season and adjust: Add salt and pepper to taste. Optionally, add red chili flakes and blend briefly.
  6. Finish with parsley: Fold in chopped parsley with a spatula for added freshness and color.
  7. Serve: Transfer dip to a serving bowl, drizzle with olive oil, garnish with parsley, and serve with pita bread, crackers, or fresh veggies.
