  • 4 slices of thick-cut bread (brioche or challah)
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • Butter or oil for cooking
  • Powdered sugar (optional)
  • Maple syrup (optional)
  • Whipped cream (optional)
  • Chopped nuts (optional)

Instructions

  1. In a small bowl, combine cream cheese, pumpkin puree, maple syrup, cinnamon, nutmeg, and a pinch of salt. Mix until smooth and creamy. Set aside.
  2. Take your thick-cut bread slices and carefully cut a pocket into the side of each slice. Be gentle to avoid tearing the bread.
  3. Using a butter knife or spoon, spread the pumpkin cream cheese filling inside the pocket of each slice of bread. Use about 1-2 tablespoons of filling per slice.
  4. In a medium bowl, whisk together eggs, milk, vanilla extract, and cinnamon until well combined.
  5. Heat your skillet or griddle over medium heat and add a little butter or oil. Dip each stuffed slice of bread into the egg mixture, coating both sides evenly.
  6. Place the dipped bread onto the hot skillet. Cook for 2-3 minutes on each side, or until golden brown and slightly crispy. Adjust the heat if needed to prevent burning.
