Ingredients

  • Medjool dates, pitted
  • Blue cheese (or substitute with goat cheese, cream cheese, or brie)
  • Thinly sliced prosciutto
  • Optional: toasted almonds or walnuts
  • Optional: honey for drizzling

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Using a sharp knife, carefully slice each date lengthwise and remove the pit, ensuring the date opens like a book.
  3. Stuff each date with about half a teaspoon of blue cheese. Optionally, press a toasted almond or walnut into the cheese.
  4. Cut the prosciutto slices into thirds lengthwise. Wrap each stuffed date with a strip of prosciutto, ensuring the cheese is fully enclosed.
  5. Place the wrapped dates seam-side down on the prepared baking sheet. Bake for 12-15 minutes, or until the prosciutto is crisp and slightly golden.
  6. Remove the baking sheet from the oven and let the dates cool for 2-3 minutes before serving.

Notes

Wrap the prosciutto tightly around the dates to ensure it crisps up nicely. Avoid overstuffing the dates to prevent cheese from spilling out during baking.
