  • 2 boneless, skinless chicken breasts
  • 8 ounces fettuccine, linguine, or penne pasta
  • 1 cup freshly grated Parmesan cheese
  • 1 cup heavy cream
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons freshly chopped parsley

Instructions

  1. Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
  2. Season chicken breasts with salt and pepper on both sides. Heat olive oil in a large skillet over medium heat. Add chicken and cook for 4-5 minutes per side until golden brown and fully cooked. Remove chicken from skillet and set aside.
  3. In the same skillet, reduce heat to medium-low and add butter. Once melted, stir in minced garlic and cook for 1-2 minutes until fragrant.
  4. Slowly pour in heavy cream and chicken broth, stirring continuously until smooth. Let simmer for 3-4 minutes until it starts to thicken.
  5. Gradually whisk in grated Parmesan cheese until fully melted and sauce is creamy. Add crushed red pepper flakes if desired.
  6. Slice cooked chicken into strips. Add cooked pasta and chicken to skillet with sauce, tossing gently to coat evenly. Add reserved pasta water as needed to adjust sauce consistency.
  7. Remove skillet from heat and sprinkle with freshly chopped parsley. Serve immediately.
