  • 2 tablespoons heavy cream or milk
  • Green food coloring (optional)

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, cream together 1 cup softened butter, granulated sugar, and brown sugar using a mixer on medium speed until light and fluffy, about 3-4 minutes.
  3. Add eggs one at a time, beating well after each addition. Stir in 1 teaspoon vanilla extract and 1 teaspoon peppermint extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix dry ingredients into wet ingredients until just combined.
  5. Fold in the chocolate chips gently with a spatula until evenly distributed.
  6. Drop dough by rounded tablespoons onto the prepared baking sheets, spacing about 2 inches apart. Use a cookie scooper for uniform size.
  7. Bake for 10-12 minutes or until edges are golden but centers are still soft. Remove from oven and let cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
  8. While cookies cool, prepare the filling: In a medium bowl, beat 1/2 cup softened butter and cream cheese until smooth and fluffy, about 3 minutes.
  9. Add powdered sugar gradually, beating well after each addition. Mix in peppermint extract and heavy cream. Add green food coloring if desired and mix until uniform.
  10. Spread or pipe about 2 tablespoons of filling onto the flat side of one cookie, then gently press another cookie on top to make a sandwich.
  11. Chill sandwiches in the refrigerator for at least 30 minutes to let the filling set before serving.
