  • 1/3 cup (80 ml) honey

  • 1 baguette
  • 1 clove garlic

Instructions

  1. Preheat your oven to 375Β°F (190Β°C). Slice the baguette into thin rounds and arrange them in a single layer on a baking sheet.
  2. Lightly brush the baguette slices with olive oil. Bake for 6-8 minutes, flipping halfway through, until golden and crisp.
  3. In a small saucepan, combine 1/3 cup (80 ml) honey with 1 teaspoon red pepper flakes. Heat over low heat for 2-3 minutes, stirring occasionally, until the honey is warm and infused with spice. Remove from heat and let it cool slightly.
  4. In a mixing bowl, combine 1 cup (240 g) whole milk ricotta and 2 tablespoons (30 ml) heavy cream. Using a hand mixer or stand mixer, beat on medium speed until the mixture is light and fluffy, about 2-3 minutes.
  5. Add a pinch of salt and a drizzle of olive oil to the whipped ricotta. Gently fold to combine, ensuring the texture stays airy.
  6. Spread a generous dollop of whipped ricotta onto each toasted crostini. Drizzle with the hot honey, letting it cascade over the edges for a gorgeous presentation.
  7. Sprinkle with fresh thyme leaves for a pop of color and herby flavor. Optional: Add an extra pinch of red pepper flakes for a fiery kick.
