Irresistible Garlic Chicken and Gnocchi Skillet Recipe

A rich and comforting one-skillet dish featuring garlicky chicken, tender gnocchi, and a creamy sauce. Perfect for weeknights or special gatherings.

  • 1 lb chicken breast, boneless and skinless, cut into bite-sized pieces
  • 16 oz potato gnocchi, store-bought or homemade
  • 45 cloves garlic, freshly minced
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1/2 cup Parmesan cheese, freshly grated
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 2 cups fresh baby spinach
  • Salt and pepper to taste
  • Optional: Red pepper flakes for heat

Instructions

  1. Dice the chicken breast into bite-sized pieces, mince the garlic, and grate the Parmesan cheese. Wash and dry the spinach leaves.
  2. Heat a large skillet over medium heat and add 1-2 tablespoons of olive oil. Once the oil is shimmering, add the chicken pieces. Season with salt and pepper. Cook for 6-8 minutes, flipping halfway through, until the chicken is fully cooked and golden brown. Remove the chicken and set aside.
  3. In the same skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and cook for 1-2 minutes, stirring frequently, until fragrant. Be careful not to burn the garlic.
  4. Pour in 1 cup of chicken broth and bring it to a simmer. Use a wooden spoon to scrape up any browned bits from the bottom of the pan.
  5. Reduce the heat to low and stir in 1 cup of heavy cream. Let the mixture come together for about 2 minutes, creating a silky, creamy sauce.
  6. Add the gnocchi to the skillet and stir to coat. Cover the skillet and let the gnocchi cook in the sauce for 4-5 minutes, stirring occasionally. The gnocchi should be soft and tender.
  7. Return the cooked chicken to the skillet and stir to combine. Add the fresh spinach, stirring until it wilts into the sauce.
  8. Sprinkle the grated Parmesan cheese over the top and stir until melted and well incorporated. Taste and adjust seasoning if neededβ€”add more salt, pepper, or red pepper flakes if desired.
  9. Serve immediately while the dish is hot and the sauce is creamy. Garnish with additional Parmesan cheese and fresh parsley if desired.
