Irresistible French Onion Pasta Recipe with Gruyere Cheese

The rich, caramelized goodness of French onion soup meets the creamy comfort of pasta in this irresistible dish. Perfect for chilly evenings, it’s indulgent, cozy, and downright dreamy.

  • 12 ounces (340 g) pasta (fettuccine, pappardelle, or linguine)
  • 2 large yellow onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 1/2 cups (360 ml) beef or vegetable stock
  • 1/2 cup (120 ml) dry white wine (optional)
  • 23 sprigs fresh thyme
  • 1 cup (100 g) Gruyere cheese, grated
  • 1/4 cup (25 g) Parmesan cheese, grated (optional)
  • Salt and pepper to taste

Instructions

  1. Heat 2 tablespoons of butter and 1 tablespoon of olive oil in a large sauté pan over medium heat. Add the sliced onions and cook, stirring occasionally, for 25-30 minutes until they are golden brown and soft. Add a pinch of salt to help draw out the moisture.
  2. Once the onions are caramelized, pour in 1/2 cup (120 ml) of white wine, scraping up any browned bits from the bottom of the pan. Let it simmer for 2-3 minutes until the wine reduces slightly.
  3. Pour in 1 1/2 cups (360 ml) of beef or vegetable stock and add 2-3 sprigs of fresh thyme. Simmer for another 5 minutes, then remove the thyme sprigs.
  4. Bring a large pot of salted water to a boil and cook 12 ounces (340 g) of your chosen pasta according to package directions. Reserve 1 cup (240 ml) of pasta water before draining.
  5. Add the cooked pasta to the sauté pan with the caramelized onion sauce. Toss to coat, adding reserved pasta water as needed to loosen the sauce.
  6. Stir in 1 cup (100 g) of grated Gruyere cheese and 1/4 cup (25 g) of Parmesan cheese until melted and creamy.
  7. Transfer the pasta to an oven-safe dish, sprinkle additional Gruyere on top, and broil for 3-4 minutes until bubbly and golden (optional).
  8. Serve immediately, garnished with fresh thyme or parsley for a pop of color.
