  • 1 packet taco seasoning
  • 2 tablespoons water
  • 1 cup refried beans
  • 8 hard taco shells
  • 1 cup shredded cheese (Cheddar, Monterey Jack, or Mexican blend)
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped onions (optional)
  • 1 tablespoon olive oil
  • Optional toppings: sour cream, shredded lettuce, diced avocado, fresh cilantro

Instructions

  1. Preheat the oven to 375Β°F (190Β°C).
  2. Heat a skillet over medium heat and add the ground beef. Cook until browned, breaking it up with a spoon. Drain any excess grease.
  3. Stir in the taco seasoning and 2 tablespoons of water. Simmer for 2-3 minutes to let the flavors meld.
  4. Warm the refried beans in a small saucepan or microwave-safe bowl until softened and spreadable.
  5. Brush the taco shells lightly with olive oil. Spread a layer of refried beans inside each shell, followed by seasoned beef. Sprinkle generously with shredded cheese, tomatoes, and onions.
  6. Arrange the tacos upright on a baking tray. Bake for 10-12 minutes, or until the cheese is melted and the shells are crisp.
  7. Remove from the oven and let cool slightly. Add your favorite toppings like sour cream, lettuce, or avocado.
