  • 6 cups low-sodium chicken broth
  • 3 medium carrots, peeled and sliced into rounds
  • 3 stalks celery, chopped into bite-sized pieces
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 2 cups egg noodles
  • 2 tablespoons olive oil
  • 2 dried bay leaves
  • 2 tablespoons chopped parsley (optional, for garnish)
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients: Chop carrots, celery, onion, and garlic. Cut chicken into bite-sized pieces and set aside.
  2. SautΓ© the veggies: Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, and cook for about 5 minutes, stirring occasionally, until slightly softened.
  3. Add the garlic: Toss in minced garlic and cook for another minute, stirring frequently to prevent burning.
  4. Add chicken: Push veggies to the side and add chicken pieces to the pot. Cook for 3-4 minutes until lightly browned.
  5. Pour in the broth: Add chicken broth, bay leaves, and a pinch of salt and pepper. Stir and bring to a boil.

Notes

For a richer texture, add a splash of heavy cream. To avoid mushy noodles when freezing, cook them separately and add after reheating.
